There is no such rule that taking deep fried food is an offence but should be in control to maintain good health. This maddur vade recipe is one such snacky delight to try at least once that you will never regret and only become addictive. Its crisp and unique texture taste made it as a well renowned snack. The very name maddur for this vada is derived from a small town in Karnataka. The combination of maida, rice flour and sooji are the ingredients that go into this vada. I have added some crushed pepper corns but you can add even chilli powder or more green chillies. Sesame seeds are added to give a nice
nuttiness but you can add some cashew nuts for more richness and taste. I have added black sesame you can add white sesame seeds also. The dough made should not be either too hard or too sticky. Grease the hands with oil before rolling the dough. You can even shape the dough on a polythene sheet. While frying the vada’s the heat should not be too high as it will not cook and get browned easily. More onions gives a special taste to this vade. maddur vade recipe /maddur vada
INGREDIENTS:
Rice flour – 1 cup
Maida /allpurpose flour – 1/2 cup
Rava/suji – 1/2 cup
Chopped green chillies – 3-4
Chopped onion – 2(big)
Sesame seeds – 2 tsp
Cumin – 1/4 tsp
Some curry leaves
Salt as per taste
Asafoetida/hing – 1/4 tsp
Grated ginger – 3/4 tsp
Pepper corns crushed – 1 tsp
Oil to fry
METHOD:
1. Take all the flours in a mixing bowl mix it.
2. Add all the ingredients like onions, green chillies,cumin,curry leaves, salt, hing, ginger, pepper and mix well.
3. Now add some sesame seeds with hot oil(2 tbsp).
4. Mix well now by adding water make a loose dough not hard.
5. Lets leave it for 10 minutes to marinate.
6. Heat oil in a kadai.
7. Using a polythene sheet you can pinch balls and make roundels and transfer it to hot oil.
8. Grease hands with little oil before making balls.
9. Fry in medium flame so that it cooks well.
10. Take out in a tissue and serve hot with coconut chutney.

Notes
Grease the hands before rolling the vada’s.
More onions added enhances the exact taste for this vada’s.
I have added some crushed pepper corns but you can add even chilli powder or more green chillies.
Adding hot oil is a must to make it crispier and for exact texture.
