This kootu podi is totally a unique type of flavouring that is always needed in making kootu. Please check my kadala paruppu kootu here in my blog. We can definitely use in paruppu sambar that we make for lunch. It can be added to any type of puli kuzhambu you make instead of plain coriander powder.. This kootu powder is a salem style special powder made by chettiyar community living there. In every home we make this podi either in small batches or in large according to need. If we are doing in large we get it done from the mill. Its subtle in flavour when you add it into kuzhambu it gives a elevation to that particular dish. Just like kuzhambu milagai podi this powder
is compulsive powder in our chettiyar community. You can just use this in replacement to kuzhambu milagai tool or even plain coriander powder. But I must say you can’t add in all the gravies and curries you make mostly we use it in kootu then in certain sambar variations. Make this kootu powder this time its a total different recipe that you will make giving a total nice difference to your dish.
kootu podi / kootu powder recipe
INGREDIENTS:
Coriander seeds/kothamalli – 1 cup
Cumin/jeera -1/4 cup
Cinnamon/pattai – 3-4 (2 inch pieces)
Clove/lavangam – 7-8
Poppy seeds/khus/khus – 1 tbsp
Sombu/aniseed – 1 tbsp
Vendhyam/fenugreek – 11/2 tsp
Pepper/milagu – 2 tbsp
Kadala paruppu/bengal gram – 21/2 tbsp
Ulundhu/urad dal – 11/2 tbsp
perungayam/hing – 1 tsp
Arisi/rawrice -3 1/2 tbsp
Some curry leaves
METHOD:
1.Keep all ingredients ready.
2.Heat a kadai when it heats up dry roast all the given ingredients.
3.First dry roast coriander till nicely roasted take out.
4.Dry fry urad dal and bengal gram till it golden take out.
5.Add in the rice fry nicely till colour changes lightly.
6.Put cumin and sombu together roast till done.
7.Next add vendhyam and milagu.
8.Khus khus is added till it pops.
9.Add curry to become crisp.
10.Then add cloves, and cinnamon fry till nicely aromatic.
11.Add hing when about to grind.
12.Let every thing cool on a plate.
13.When cool grind in a spice grinder to a powder.

Notes
- Roast ingredient in medium high flame don’t burn the spices in high flame.
- Adding curry leaves is optional..
- Keep in airtight container to lock the flavours.
