Its diwali and not to mention colourful variations of sweets is all around us filling our eyes and tummy. I love to try various sweets for each diwali and this time I have tried this kesar jalebi recipe. Many don’t know the difference between the jalebi and jangri. Jangri is made with rice and urad dal it will be soft and juicy and Iam eager try out some day.Jalebi is done with all purpose flour with all crispy outside and juicy inside. It was so yummy crispy juicy with best saffrony aroma. Authentic way to do this jalebi is to ferment for a day and then do the recipe. This time I have tried the instant version
using curd and baking powder.These kesar jalebi recipe tastes crispy for some hours and thats why it should be enjoyed hot or warm. After some time it becomes soggy and looses its crispness. Some add cornflour for added crispness but this method itself came out good for me. This is a very easy sweet to try but some tricks will do all the magic like the consistency of the batter and sugar syrup. If this do comes out correct then you get mouthwatering yummy jalebi’s for sure.
kesar jalebi recipe /Instant homemade jalebi
INGREDIENTS:
All purpose flour – 1 cup
Baking powder – 1 tsp
Curd – 1/2 cup
I have used turmeric powder for yellow colour – as needed
For syrup:
Sugar – 2 cups
Water – 2 cups
Cardamom powder – 3/4 tsp
Oil to fry
Some saffron strands
Lemon juice – 1 tsp
METHOD:
1.First make batter with maida, baking powder, curd,turmeric powder and pour water little at a time bring it to dosa batter consistency without lumps.
2.Keep on beating for few minutes and rest it for 20 minutes.
3.In-between make sugar syrup by heating sugar-water and wait till the sugar dissolves If you feel there is dust filter for impurities and bring back to boil.
4.When its boiling itself add cardamom powder and saffron.
5.Consistency is just before the single string stage.
6.At half string stage switch off the stove and add lemon juice and stir.
7.Keep broad kadai with oil fill the batter in a ketchup bottle or a milk cover making a cut at the end.
8.When oil heats up squeeze jalebi’s and when golden add it to warm syrup leave it in the syrup only for few seconds take out well drained.
9.Make each batch in the same way and enjoy jalebi’s hot or even warm.
10.Drizzle some rabadi over this jalebi’s and enjoy.

Notes
Consistency of the batter is dosa batter consistency not thin more than this.
You can use artificial colour but I have used turmeric powder here.
Lemon juice added is to prevent crystallization.
No need to have single thread consistency switch off just before that.
Baking powder itself is enough no need to add baking soda.
