Kambu laddu is a traditional Indian sweet made from bajra (pearl millet) flour a healthy snack made during winters due to the their warming properties. It’s a popular winter treat known for its warmth and nutritive value.To prepare bajra til laddu, the bajra flour is roasted in ghee until it turns aromatic and golden. Badam & Sesame seeds are also roasted & ground. Then, they are mixed together with powdered jaggery.The mixture is shaped into round balls or laddus. This sweet delicacy is not only delicious but also nutritious. Bajra is rich in fiber and essential nutrients,
while sesame seeds are a good source of healthy fats and minerals. Jaggery, used as a sweetener, is often preferred for its health benefits compared to refined sugar.

Kambu laddu /Bajra til ki laddu/pearl millet laddu
INGREDIENTS:
Bajra/ Kambu maavu – 1/2 cup/80 gm
Sesame seeds/karuppu ellu – 1/4 cup/40 gm
Almond/badam – 1/2 cup/80 gm
Powdered Jaggery/vellam – 3/4 cup/130gm
Cardamom powder – 2 tsp
Ghee – 1/4 cup/60 gm
METHOD:
1.In a pan dry roast badam till nice aroma come out now add sesame seeds & let it pop.
2.When it cools grind to a coarse powder & keep in a mixing plate.
3.Now again heat kadai with ghee add kambu powder roast till nice aroma is released & colour changes.
4.Add this to nut mixture mix well when they become warm add jaggery powder mix& add cardamom powder.
5.Mix well then make laddu’s.
6.Store in airtight container & enjoy.

Notes
- Store the laddus in an airtight container once they have completely cooled down. They stay fresh for a few weeks if stored properly.
- Taste the mixture before shaping laddus to ensure it's sweet enough. Adjust sweetness by adding more jaggery
- You can add any nuts you prefer for added texture and taste.
