Healthy Lunch box Recipe/ Keerai Sadham/ Variety rice
This keerai sadam is an excellent healthy lunch box recipe both for kids and for working people. This rice can be made using siru-keerai,ara-keerai, mula-Keerai or even palak leaves. Its not that you should always make a kadayal or poriyal out of Keerai. We all know that because of its health benefits its good to take greens daily in our diet. Especially most of our kids will not accept to take greens but you have to make them have in some way or other. Its a nutrient dense dish rich in many nutrients like iron and protein. Always cook rice right for making this Keerai sadam perfectly. You can even use basmati rice to make this sadam. Don’t over cook the Keerai it will loose its appeal both in
taste and look. In some dishes I like to add garlic with skin as its all filled with antioxidants its no fault in adding as it only enhances the taste. Its an excellent healthy lunch box recipe to try. Adding cashews gives an extra feel and taste to this rice and if you ask me never skip adding it. Do make this sadam and an excellent pair for this is a potato fry/masala or a simple appalam.
Healthy Lunch box Recipe/ Keerai Sadham/ Variety rice
INGREDIENTS:
Rice (puzhungal/pacharisi) – 1 cup
(Cook rice and spread on a basin and let it cool)
Lemon juice – 3 tsp
For grinding:
Amaranth leaves(serukeerai/mulakeerai) – (one handful washed drained)
Oil – 2 tsp
Ulutham paruppu/urad dal -1 tsp
Kadala paruppu/bengal gram – 1/2 tsp
Green chillies – 2
Garlic with skin- 4-5
Small onions – one handful
Grated coconut – 1 tbsp
Salt as needed
For tadka:
Oil – 1 1/2 tbsp
Ghee – 2 tbsp
Mustard/kadugu – 1 tsp
Kadalaparuppu/bengal gram – 1/4 tsp
Ulundhu/urad dal – 1/2 tsp
Broken cashews – 2-3 tbsp
Asafoetida/hing – 1/4 tsp
METHOD:
1.Cook rice and fluff up rice and let it cool.
2.In kadai add ghee-oil mixture make mustard to splutter with Bengal and urad dal, add cashews and when its golden add hing.
3.Add this to rice and mix nicely.
4.Keep the same kadai with oil add both dals with green chillies, small onions, garlic saute well.
5.Add grated coconut and Keerai and necessary salt for rice.
6.Sprinkle water and cook Keerai.
7.Now add to a mixie and grind to coarse paste.
8.Add this to rice and mix up.
9.Add lemon juice and mix.
10.Serve with potato masala or fry or appalam.

Notes
- Don’t over cook rice for making this sadam.
- You can use basmati rice or any ordinary rice.
- Don’t over cook Keerai it may loose its colour and nutrients.
- This rice can be made using siru-keerai,ara-keerai, mula-Keerai or even palak leaves.
