It’s right time to have loads of tender coconut water even daily can be made as a routine to dehydrate from scorching summer heat. Tender coconut is all filled with enriching amounts of vitamin c. Among two varieties of tender-coconut available the yellow ones is my favourite more than the green ones. The yellow variety available here is called as “sevelani” in TamilNadu. More than tender coconut water I love the fleshy portion of the coconut very much. Its quite practical for us to have the coconut water as such but some time we can have it in other forms like desserts, beverages and even gravies are made with this tender-coconut. This time only I have made this elaneer payasam tender coconut kheer and it was very soothing and tasty.
This payasam may not be thick as of other payasams made at-least for me because I have not added any thickening agent. Next I have a plan to try tender coconut ice-cream even a pudding is also on my to do list . In this recipe adding coconut milk gives a good roundness of taste and enhances the whole recipe. Condensed milk also gives a great lift to this kind of payasam.

INGREDIENTS:
Tender coconut water/elaneer – 1 cup
Tendercoconut flesh /elaneer valukai – 1/2 cup
Sugar – 2 tbsp
Condensed milk – 3/4 cup
Cardamom powder – 1/4 tsp
Normal boiled milk (thick milk variety)- 1/2 cup
Coconut milk thick extract – 1/2 cup
Ghee – 2 tsp
Mixer of some cashews,badam and pista fine chopped.
METHOD:
1.Mash well the flesh of the tender coconut in a mixer jar and add the tender coconut water with this and keep ready.
2.Add the boiled milk and coconut milk in a bowl add sugar and when it is dissolved add the condensed milk.
3.Now after mixing add the mixer of tender coconut water to it followed by cardamom powder.
4.When it is well mixed keep a kadai with ghee add all the chopped nuts and when they brown add this to payasam mix stir well and serve chilled.

Notes
Adjust the sugar added according to your taste.
You can fine chop or grind the tender coconut while adding its all depends on our need.
This payasam may not be thick and it will be drinkable.
