Eggless muffins are incredibly easy& simple to make and this time I have made it as orange flavoured muffins with powerful addition of orange zest. Adding orange zest to this eggless orange muffins is really is a charming take which gives a fresh fruity mouthfeel that is totally overwhelming. You can add even melted butter instead of oil for more flavour.When mixed if the mixture is lumpy , just don’t worry it will make perfect muffins.You can use muffin or cupcake moulds by greasing it or use some cupcake liners. The oven temperature always differs for each oven so bake it according
to your oven timings. Muffins always gives a filling and most satisfying feel every time you have it.These eggless orange muffins are fluffy and moist and it can be an exact teatime snack.

eggless orange muffins /with no egg no butter recipe
INGREDIENTS:
All purpose flour – 120 gm
Oil/melted butter – 40 gm
Castor sugar – 75 gm
Baking powder – 3/4 tsp
Baking soda – 1/4 tsp
Salt a pinch
Curd – 90 gm
Orange zest – 1 tsp
Orange juice(fresh) – 60 ml
Vanilla essence – 1/2 tsp
Milk – 30 ml
METHOD:
1.In a mixing bowl sieve dry ingredients maida, baking powder, baking soda & salt keep aside.
2.In another bowl add curd, oil and sugar beat till smooth then add orange juice, vanilla essence & orange zest.
3.Mix well add this wet mixture little at a time to the dry mix and fold.
4.Add milk at intervals and mix nicely.
5.In-between preheat oven at 180 deg for 10 minutes.
6.Pour into cupcake liners (you can drizzle some orange zest on top) and bake for 15-20 minutes or till skewer inserted come out clean.
7.Take out cool for 10 minutes and serve.
