Christmas without a cake is meaningless baking itself is very comforting to heart and soul. Always have a love to try new dishes and will be super excited if it turns out good each time. It may be tricky many times but I never get exhausted till it turns out perfect for me. I-am a self taught person and that’s how I have learned baking all these days no pain no gain way is my path. Its a long time wish from my daughter to try this chocolate lava cake. She loves it so I made this eggless molten chocolate lava cake recipe for
her. Cooking time is more important for this if we cook it fully then it will become a perfect cake. Bake it at high temperature for short period is the trick. I found that pudding mould bakes faster than the ramekins but the outcome is the same. Some use coffee powder for more flavour but I have not used. Instead using chocolate pieces you make it into small pieces and add in that way it can melt easily while baking. As I always tell in baking the oven temperature differs so one should adjust it according to their own oven set up. But, this egg-less molten chocolate lava cake recipe is not at all a difficult one to make so do try this recipe.

INGREDIENTS;
All purpose flour – 1/2 cup /65 gms
Cocoa powder – 21/2 tbsp /15 gms
A pinch of salt
Baking soda – 1/4 tsp
Melted butter or oil – 31/4 tbsp /40 gms
Powdered sugar – 3tbsp /38 gms
Condensed milk – 3tbsp /50 gms
Lemon juice – 1/2 tbsp
Vanilla essence – 1/2 tsp
Chocolate chunks – few
Milk – 1/2 cup /100gms
METHOD:
1.Sieve maida, cocoa powder,salt, baking soda and powdered sugar all together and keep ready.
2.Take a bowl add condensed milk and vanilla essence and beat till its fluffy then add melted butter and beat.
3.Then add sieved dry ingredients in batches with lemon juice and beat nicely.
4.The batter will be thick so add milk and make the batter ready.
5.In-between grease the ramekin tins with batter and then dust with flour.
6.Preheat the oven at 200 degrees for 10 minutes.
7.Pour the batter 3/4th in each ramekins and place the cake mixture inside the oven and bake for 7-8 minutes.
8.When the corners are cooked well its time to take out of the oven.
9.Rest for sometime then invert it on to a plate and enjoy.

Notes
You can use any cupcake moulds or some type of oven proof moulds you have.
Do not over cook the batter or else it will become a cake.
The lava should ooze out when cutting the cake for that we must cook it for lesser amount of time.
Oven temperature differs from oven to oven so adjust accordingly.
Instead of butter you can use any flavourless oil.
It is best to make smaller pieces of chocolate to place in the centre of the cake batter.
