Achu murukku a very popular snack is every ones favourite because of it crispy crunchy texture with mild sweetness. This is a eggless achu murukku recipe equally tasty as the one made with egg. The mixing of the batter and frying the murrukku is very easy. But the trick lies in the achu mould it should be well practiced before making the Achu murukku. Otherwise batter may stick to the mould and it will not come off. For this you should make it well seasoned by dipping it for long hours like one day or so in oil itself. Then by now the mould will be ready for use. If you don’t have any patience in doing all this prep work then buy a nonstick and use. Using nonstick
may be so easy that every one can make achu murukku easily. At first while making with normal mould if it does not come off you have to use a spoon or fork to remove and after few times it will come off from the mould easily. Instead of cardamom powder you can use vanilla essence but I have not tried. If you have black sesame seeds use it instead of white ones. The batter should not be too thick or thin it should be thick enough to coat the spoon. This eggless achu murukku recipe is very easy to make do make it and enjoy.

INGREDIENTS:
Rice flour/arisi maavu – 1 cup
Maida/all purpose flour – 1/2 cup
Powdered sugar – 1/2 cup
Coconut milk – 1 cup
Water as needed
Cardamom powder – 1 tsp
White sesame seeds/ellu – 1 tbsp
METHOD:
1.Get every ingredient ready.
2.Take extract of coconut milk measure and keep.
3.In-between heat up a kadai with oil and immerse the achu to heat up nicely.
4.Take a mixing bowl add coconut milk dissolve sugar in it.
5.Add maida, rice flour and mix add needed water without lumps.
6.Lastly add cardamom powder and sesame seeds mix well.
7.The batter should coat the mixing spoon that’s the consistency.
8.Take hot achu from oil dip in the batter half way and place it in hot oil.
9.Keep on shaking the batter will fall off take out when golden in a tissue.
10.In the same way all the murrukku should be done.
11.Each time before frying the batter the achu should be dipped in hot oil.

Notes
- When you take out from the oil it will be little soggy but after sometime it will be crisp to eat.
- I have used white sesame seeds you can use black ones.
- Don’t leave murukku for long in the oil it becomes charred so quickly.
- The achu should be nicely hot before dipping it in batter.
- Only when the mould is hot the batter will stick.
- Batter should not be too thick but not watery batter should coat the spoon.
- If the batter does not drop off from the mould use a fork or a spoon and remove.
- After some try the batter will easily fall off from the mould.
- Instead of rice flour some make with maida also.
- If you don’t want to risk with using traditional mould you can buy a nonstick and make this achappam easily.
