Ragi mudde is little harder to make if its done in a traditional way but now there is an easy way to make ragi mudde/ Ragi kali in pressure cooker. It is called ragi mudde in Karnataka,ragi sankati in Andhra, and ragi Kali in TamilNadu. It is high in calcium than rice or wheat which have become our main staple nowadays. Of-course nowadays we are shifting our diet to a more healthy ancient millet way. Ragi comes from millet family all varieties of millet’s are equally good. Ragi especially is high in fibre. It prevents bouts of high blood sugar levels and keeps sugar under control.sprouted ragi has vitamin c which helps in proper absorption of iron in the body. This Ragi mudde has a bland taste and goes well with
sambar and non veg gravies. In our home we sometimes use to have it with honey when Kali is still warm. All of us must incorporate these millet’s in our diet so that both elders and children will lead a healthy life style. This is the easiest way to make ragi mudde in pressure cooker so do try and enjoy the healthy goodness.

INGREDIENTS:
Ragi flour/ragi maavu – 2 cups
Water – 41/2 cups
Salt as needed
Ghee – a small dollop(optional)
More ghee or water to roll up mudde
METHOD:
1.Take ragi flour in a mixing bowl add some salt and then water and dilute it without lumps.
2.Add ghee and stir.
3.Bring this to boil by continuously stirring otherwise bottom gets charred.
4.At one stage it will form a mass and the lumps disappear.
5.Wet your hands and touch the dough it will not stick now clean the sides.
6.Place it in a cooker with boiling water and close the vessel with lid.
7.Then close the pressure cooker put weight and leave for many whistles.
8.When pressure subsides open cooker and remove plate.
9.Now you will see the kali is all done.
10.Now you can stir the kali nicely(optional).
11.Then grease hands with ghee or water make balls and serve with any spicy sambar.

Notes
- Stirring nicely without lumps is important for that use a wire whisk it will be easy.
- Adding ghee to make kali is optional.
- Depending upon your cooker type leave it for many whistles so that the kali cooks well.
- After cooking kali in cooker you can stir the mixture nicely to get a smooth textured kali.
- Grease the hands with ghee or water for making balls.
