Soups always gives a soothing comfort and stimulates a nice appetite to have a good hearty meal. Upcoming days will be chill a hot and comforting soup is always needed. This easy homemade vegetable soup recipe is simple to make with minimal ingredients. I have added some celery and spring onions as I had it but you can use even onions if you don’t have one. Choice of vegetables is also your wish but not all the vegetable will be good to make this soup. Instead of beans you can add
some sweet corn or even cabbage. Adding some cooked noodles to this soup make this as vegetable noodle soup. If you are not having any one vegetable like if you do’t have carrots also its ok. Some will not want to add ajinomoto they can very well avoid it. But I don’t mind adding it once in a while in small amounts. Suppose if you are not having vegetable stock then replace it with water and corn flour slurry will do the job. Do try this easy homemade vegetable soup recipe for sure.

INGREDIENTS:
Carrot finely chopped – 1/2 cup
French beans finely chopped – 1/4 cup
Celery chopped – 1 tbsp
Spring onion chopped – 1 tbsp
Vegetable stock – 2 cups
Butter/oil – 1 tbsp
Pepper powder as needed
Salt as needed
Corn flour – 21/2 tsp
Ajinomoto(optional) – 1/2 tsp
METHOD:
1.Chop all the veggies and keep ready.
2.Make a slurry with cornflour and little vegetable stock mix well and keep ready.
3.Take a thick bottomed pan add butter when it melts add spring onions and celery saute for a minute.
4.Then add carrot and beans add needed salt with ajinomoto.
5.Sauté well by adding sugar for a minute.
6.Then add the vegetable stock and bring to a boiling when it starts boiling add the corn flour slurry to it with some pepper powder.
7.Let it boil for few minutes till the soup thicken from the slurry we added.
8.Serve hot with needed salt and pepper if needed.

Notes
You can even add some finely chopped mushrooms or some boiled noodles.
According to taste you can add pepper and salt while serving.
I have added ajinomoto but its optional.
