Cookies are always easy to make and that too when they are eggless like this cranberry cornflakes cookies.They are soft, buttery and chewy with crunchiness of the cornflakes. If you are not having cranberries at home just replace it with raisins. Loved the taste of cranberry they are tarty and sweet and when combined to make a cookie it was really a scrumptious treat. First I just wanted to bake as plain cornflakes cookie with some nuts to go with it. I already had some dried cranberries in my pantry so thought of adding it too. I baked it at 180 degrees for 20 minutes but as usually said each
oven has difference in temperature do check and proceed. Store bought cornflakes some times is not crunchy for that you can bake it for some time and cool them. Before you are starting the recipe to combine this cornflakes. Otherwise if your cornflakes is already crunchy don’t worry you are good to go. Please ensure that you arrange the cookies for baking with at least one inch space between them as they will spread while baking.This cranberry cornflakes cookies is very easy to make do try it at home.

INGREDIENTS:
All purpose flour/maida – 120 gms
Castor sugar – 70 gms
Corn flour – 2 tsp
Butter – 75 gms
Cranberries(dry chopped) – 15 gms
Corn flakes – 15 gms
Milk – 40 gms
Milk powder – 1 tsp
Baking soda – 1/8 tsp
Salt a pinch
Vanilla essence – 1/2 tsp
METHOD:
1.Crush corn flakes in a mixer jar roughly and keep ready.
2.Sift in maida, cornflour, salt, baking soda and milk powder in a bowl and keep ready.
3.In a mixing bowl beat butter, sugar and vanilla till light and frothy.
4.Add in the flour and mix.
5.Then add milk to form a stick dough like mass.
6.In a separate plate spread cranberries and cornflakes.
7.Pinch off ball and put it in the cranberry corn flakes mixture press and roll.
8.In-between preheat oven at 180 degrees for 10 minutes.
9.Spread a baking paper and arrange the rolled balls giving space between them.
10.Bake for 15-20 minutes or till done.
11.Take out and cool, enjoy any time.

Notes
Depending upon your oven the time will vary to bake the cookie.
Cornflakes can be baked for some time like 5 minutes in the oven so that while we combine with the cookie ingredient it will give a super crisp cookie.
But if your cornflakes are already very crisp you need not crisp it.
Can add more cranberries which adds more chewiness to the cookie.
If you are not having cranberries you can replace with raisins.
