One such sweet is this simple chettinad special kalkandu vadai which is very easy to make but tastes good. We need not soak ulundhu for long hours half an hour to maximum one hour is enough. It was very subtle sweet
to taste not overpowering at all. No water should be there while grinding because the kalkandu powder added itself will bring the vadai to its correct consistency. But when you add more sugar than needed then it will become watery and you cannot shape the vadai properly. The raw rice added gives all the crunchiness and body to this chettinad special kalkandu vadai. Its very easy recipe to make without any complex ingredients so do try this sweet vadai for sure.

INGREDIENTS:
Whole urad dal/mulu ulundhu – 1 cup
Rice /pacharisi – 1/4 cup
Kalkandu/rock candy(powdered) – 1 cup
Oil to fry
METHOD:
1.Wash both urad dal and rice nicely and soak for one hour.
2.Then drain dal rice mixture and spread on a cotton cloth for some time.
3.In the mean time powder kalkandu measure and keep.
4.Add urad dal in batches with some powdered sugar added.
5.Make a thick smooth paste.
6.Grind the rest in same way and fluff up the batter with fork.
7.Keep a kadai with oil to heat and when it heats up make the flame to medium.
8.Keep water in separate bowl to wet the hands.
9.Wet hands then take a dollop of maavu with water dipped thumb make hole and drop in oil.
10.Fry golden fry by adjusting the flame and take out in a tissue.

Adjust sugar according to your taste.
Don’t fry vadai at high flame adjust accordingly so that it cooks from inside.
