It involves some pre-preparatory work before making this Burmese egg bhejo recipe. It includes getting ready with fried onions,fried garlic.salt water,lemon water and chilli flakes oil. If these ingredients are ready then its just assembling and relishing of-course you should have boiled eggs ready. Excellent and comforting street style food usually served with atho which is a noodle dish that is sweet,spicy and tangy. Along with a crispy pe kyaw. Its a thattai like deep-fried crisps that is totally delicious.I should say egg bhejo is itself a-fulfilling snack giving bland tasting plain egg flavour and taste. Even-though
we add tamarind water I love adding lemon-juice diluted water for extra tanginess. For more colour I have added Kashmiri chilli powder mixed with chilli flakes with hot oil. So you can miss adding chilli powder and just chilli flakes alone. Do try this egg bhejo and enjoy.

INGREDIENTS:
Boiled eggs – 5
For water salt mix – 2 tbsp water+salt 1/2 tbsp
For lemon water mix – 1/2 tbsp lemon juice +2 tbsp water
Tamarind extract – few tbsps
Fried garlic (from one clove sliced thin)
Onions to be fried (from 2 onions)
Kashmiri chilli powder – 1/2 tsp
Some hot oil to mix with 2 tbsp chilli flakes
Oil to fry onion
Some chopped coriander
METHOD:
1.Keep ready with all the ingredients.
2.Boil eggs for 10 minutes cool take off shell and keep ready.
3.Keep ready with tamarind water, lemon mixed with water and salt water.
4.To chilli flakes add chilli powder and hot oil and keep ready.
5.Fry onions till golden take out and keep .
6.In the same oil fry garlic till golden and keep ready.
7.Now take egg slit in the middle stuff onion,gar;lic.
8.Then add salt water, lemon juice and tamarind water.
9.Now add chilli flakes oil.
10.You can add more fried onion and garnish with chopped coriander.
11.Serve with tho or as it is as a snack.

Notes
- The stuffing can be more or less same way spices added can be more as you wish.
- .Don’t slit the egg too much make a nice cut so that you can stuff comfortably.
