I have made so many dishes out of brinjal but this one is so simple to make. Great thing about this is that you can make tasty brinjal sabji recipe in less time. Brinjals are actually fibre rich with nutrients that many of us miss to realise. For many brinjal may be allergic but if you are not definitely add this regularly in day today menu. Of course you can make this sabji as a semi gravy or as a dried one whichever way its delicious and comforting. Most of them make it along with potatoes but without aloo also its very tasty. No need to fine chop everything can be roughly chopped just stir in and make this gravy. You don’t
need onions to brown or something its very easy dish to make in less time. while selecting brinjal it should be firm without any holes that way you will be selecting tender seedless brinjals. Have used less tangy variety tomatoes if you are using naatu thakkali then use less.This brinjal sabji recipe is very simple to make its very good side dish for all the pulav’s and roti’s. INGREDIENTS:
Brinjal – 1cup(roughly chopped)
Onion – 1(chopped roughly)
Tomatoes chopped roughly – 3(medium)
Ginger garlic paste – 1 tbsp
Salt as needed
Chilli powder – 1 tsp
Coriander powder – 1 tsp
Turmeric powder – 1/4 tsp
Garam masala powder – 1 tsp
Oil – 1 tbsp
METHOD:
- Keep every ingredient ready.
2. Keep a kadai with oil to heat up.
3. Add onion and tomatoes saute with little salt so that it cooks fast.
4. Put gingergarlic paste and stir in to get raw smell to go away.
5. Add in the brinjal and saute let the colour to change.
6. Put in the spice powders chilli, coriander ,turmeric and garam masala.
7. Add the required salt and stir in for some time.
8. Add required water and close the kadai with lid.
9. So that everything cooks through and water dries up.
10. When it comes to a semi gravy stage switch off.
11. Can be had as a side dish for roti’s and pulav.

Notes
- Spices can be added according to need.
- You can make it as a semi gravy or a dry one.
- Even potatoes can be added along with brinjal.
- I have used onions and tomatoes as big chunks you can fine chop them and use.
