banana cake easy recipe (eggless with nuts)No one is ready to eat over ripe banana’s and they sit simply blinking at me!there was a thought running in my mind to make a cake using these banana’s.As a matter of coincidence I should say this time my friend deepa too had a very same thought to make a cake (banana cake easy recipe). To introduce she is my long-term wonderful friend who is a selfless person,kind at heart and she does not dare to scold and correct me when I make a mistake or pacify me when Iam down..banana cake easy recipe (eggless with nuts)not only me our whole group of friends in my circle are really gifted to have such a friend.Let’s come to the point now hmmm….yes!she too had a same story with left over ripe banana’s!was ready to make one she did it and messaged me with photos that how nice and soft it turned out.She insisted me to try out this recipe which she gathered from googling and I too tried her method and it turned out to be real divine stuff. Again I messaged her with photos she was very happy that it came out well. The oven timings are totally different for various brand ovens so cooking time differs accordingly.I have used only the wheat flour you can use in combinations of maida and wheat flour.Any nuts that are available can be used even walnuts will be so apt and awesome with this banana cake.

INGREDIENTS:

Over ripe bananas – 2 (big)
Wheat flour – 11/2 cups
Oil – 1 cup
Vanilla essence – 1/2 tsp
Spice mix:cinnamon and cardamom -1/4tsp,cloves 1/8th tsp (all powders)
Baking soda – 1/2 tsp
Baking powder – 11/2 tsp
Salt a pinch
Honey – 1tbsp
Sugar – 1/2 cup
Some chopped dry fruits(pista,badam,dry grapes)

METHOD:

1.Grease a baking tin with oil or butter and dust with flour on all sides and keep ready.
2.In a mixer jar blend bananas and sugar and take it in a bowl or blend it in a hand blender without any lumps.
3.Add oil to it and mix nicely till it is all mixed up.
4.Then add spice powders and then vanilla and mix nicely.
5.In-between pre-heat oven at 180 degrees for 10 minutes.
6.Sift in the flour,baking soda,baking powder with a pinch of salt directly to the banana mixture.
7.Fold in without any lumps by adding little by little.
8.Add in dry fruits and honey ,reserve some nuts to spread on top before baking.
9.Transfer it to a greased baking tin and here I have used a bread tin.
10.Level the dough and smoothen it add rest nuts and press gently.
11.Bake it for 30-40 minutes depending upon your oven’s nature the timing differs.
12.Take out and after it cools cut and serve.

Important note:As my oven temperature is different I have baked it closing with a tin lid but you can bake in a round pan without losing for browning on top too..

Notes

Cooking time varies from oven to oven.
I have used a bread tin you can used a 8 inch round pan too.
If you are having small banana's then use 4 and bake.
Add moderate spice powder as given otherwise their flavour will be over powering.
I have used only wheat flour but you can use combination of all-purpose flour and wheat flour.
You can use any type oil for this even olive oil.
