banana cake easy recipe (eggless with nuts)

Ingredients
  

  • Over ripe bananas - 2 big
  • Wheat flour - 11/2 cups
  • Oil - 1 cup
  • Vanilla essence - 1/2 tsp
  • Spice mix:cinnamon and cardamom -1/4tsp cloves 1/8th tsp (all powders)
  • Baking soda - 1/2 tsp
  • Baking powder - 11/2 tsp
  • Salt a pinch
  • Honey - 1tbsp
  • Sugar - 1/2 cup
  • Some chopped dry fruits pista,badam,dry grapes

Method
 

  1. Grease a baking tin with oil or butter and dust with flour on all sides and keep ready.
  2. In a mixer jar blend bananas and sugar and take it in a bowl or blend it in a hand blender without any lumps.
  3. Add oil to it and mix nicely till it is all mixed up.
  4. Then add spice powders and then vanilla and mix nicely.
  5. In-between pre-heat oven at 180 degrees for 10 minutes.
  6. Sift in the flour,baking soda,baking powder with a pinch of salt directly to the banana mixture.
  7. Fold in without any lumps by adding little by little.
  8. Add in dry fruits and honey ,reserve some nuts to spread on top before baking.
  9. Transfer it to a greased baking tin and here I have used a bread tin.
  10. Level the dough and smoothen it add rest nuts and press gently.
  11. Bake it for 30-40 minutes depending upon your oven's nature the timing differs.
  12. Take out and after it cools cut and serve.

Notes

Cooking time varies from oven to oven.
I have used a bread tin you can used a 8 inch round pan too.
If you are having small banana's then use 4 and bake.
Add moderate spice powder as given otherwise their flavour will be over powering.
I have used only wheat flour but you can use combination of all-purpose flour and wheat flour.
You can use any type oil for this even olive oil.
