Almost every one here is addicted to this wonderful addictive snack “bajji”. It’s very easy to prepare and can be stored in an airtight container. Trademark pairs are with a cup of coffee or tea as an evening tea time snack. This bajji is really addictive that you can never stop with a single piece. One of my relative aunt use to roast the whole kadala paruppu and rice separately. Then she will grind in a mill and then mix up all the other ingredients as usual and keep. I have never tried this method. For bajji maavu the kadala maavu/besan should be fresh and the combining ingredients should also be in correct amounts to get a perfect bajji flour. Keeping this one bajji flour you can make many variations and varieties as bonda’s and pakora’s using varies vegetables.Its always good to make our own bajji flour than buying it as ready-made one. Whether you make bajji or bonda serving it with coconut chutney always makes it complimentary and a complete snack.

INGREDIENTS:
Bengal gram flour/kadalai mavu – 1 cup
Rice flour – 1/4 cup
Asafoetida/hing – 1/4 tsp
Salt as per taste
Chilli powder – 2 tbsp
Turmeric powder – 1/2 tsp
Baking soda – 1/4 tsp
All purpose flour – 1 tbsp
METHOD:
1.Take a large bowl add all the listed ingredient mix once.
2.Pass it through a sieve and store it in an airtight container.
3.when necessary take required amount mix it with water.
4.The consistency is that it should coat nicely with whatever you dip,it may be an onion,raw banana or any other.
5.Now keep a kadai with oil,after coating with suitable vegetable,fry in medium high heat.
6.Fry till golden and take out in a tissue and enjoy.

Notes
You can use onion,capsicum,brinjal,potato,raw-banana or any other veggie of your own choice.
Put baking soda in moderation as too much will make the bajji oily and it will taste bitter.
You can use little hot oil to the batter when mixing for bajji or bonda.
You can add some cumin seeds or ajwain while mixing,but I don’t add it.
Consistency is very important and we should fry up the batter immediately after mixing .
After a while means it will start absorbing more oil while frying.
