Finger millet or Ragi can be one of your excellent weight loss diet, if you are in the process of losing some weight. when taken in a right way it will surely yield you good results. It is high fibre ,protein,high in calcium and everything you need to replace rice and even wheat in our diet. This batter with Ragi is a 4 in 1 batter recipe from which you can make soft idli’s, dosa’s,uthappam’s and appam. Not only appam we can make excellent paniyaram with this one batter. Using this same proportion given you can grind it in a wet grinder for smooth batter. I have done this using a mixer jar and job is much easier and quicker when you don’t have much time. By fermenting the ragi batter
you are tripling the health benefits in a natural way. If you are making paniyaram add some chopped onion, curry leaves, green chilies and grated ginger to the batter. Mix well you can even make a little tadka with this and then add to the batter. Do try this 4 in 1 batter with ragi to make soft idli’s,dosa’s,uthappam’s and appam.
4 in 1 batter with Ragi /soft idli’s dosa,uthappam appam
INGREDIENTS;
Ragi batter:
Whole ragi – 11/4 cups
Idli rice – 3/4 cup
Urad dal(whole) – 1/2 cup
Fenugreek seeds/vendhyam – 1/2 tsp
Aval/poha – 1/4 cup
Rock salt for batter
For Appam:
Ragi batter – 1 cup
Coconut milk – 1/4 cup
More water to dilute
METHOD:
1.Wash and soak ragi, rice, urad dal with fenugreek all in one bowl for 4-6 hours.
2.Then when it gets soaked use same water and grind to a smooth batter.
3.Add needed rock salt and mix well.
4.Let it ferment for 8 hours.
5.When it ferments lightly fluff up.
6.Mix nicely heat a idli pot with water and steam as idli’s.
7.Using same batter dilute it with little water and bring it to dosa batter consistency and make dosas.
8.Next make uthappams.
9.For appam batter add coconut milk and some water to bring to thin appam batter consistency,
10.Make appams and enjoy.

Notes
- You can grind it in wet grinder to smooth batter.
- Ragi mixture should be soaked well.
- Fully fermented batter gives perfect idlis, dosas and uthappams.
- For appam make the batter to right consistency to get nice appam.
