Recipes famous to that particular region around the world may be not familiar to me always!but rediscovering and exploring such unknown recipes gives me immense pleasure and joy.Uppu huli dosa is one such prominent breakfast variety in mangalore and udupi cuisines.Udupi cuisine is one of the celebrated cuisines around the world!with prominence of coconut usage this udupi cuisine are more balanced and finger-licking good.The uppu huli dosa has a mixture of sour,spicy and tangyness within so actually no side dish is needed as such but you can very well serve with simple coconut chutney.It can also be had with honey or with coconut jaggery mixture.In some places spices are roasted and ground but it is not necessary always!its a different kind of dosa that is worth tasting.

INGREDIENTS:
Idli rice/Raw rice – 1 cup
Urad dal/split black gram dal -2 tbsp
Fenugreek/methi seeds – 1 tsp
Tamarind – lemon size
Red chillies – 4-5
cumin seeds – 3-4 tsp
Coriander seeds – 4-5 tsp
Coconut (scrapped)- 1/2 cup
Powdered jaggery – 2-3 tbsp
Salt to taste
METHOD:
1.Soak rice,dal and methi seeds together overnight and in the morning grind it.
2.Soak tamarind in water for 15 minutes take extract and keep.
3.Now grind Red-chillies,cumin,coriander,jaggery,coconut by adding tamarind extract.
4.Mix both mixture in a container by adding salt.
5.Bring it to dosa consistency by adding needed water.
6.Now keep dosa pan pour dosa as you would do for regular dosa by adding oil.
7.your dosa is ready to serve.

here I have served with coconut chutney.
