Just when I was looking for a good bakery style salt biscuits around the web I came across a you tube video which explained about the famous salt biscuits of Hyderabad!got very much influenced by those procedure because it resembled the same tea kadai biscuit that are available in near by tea stalls and bakeries..mm..then what? I made a try!!got a pleasing result.how to make salt biscuits/bakery(hyderabadi)styleTypically most of the time we mix butter and sugar mixture together!!but for this the flour and butter are mixed vigorously till smooth.It seems they add ammonia instead of baking powder/soda!but I have added baking soda instead.The texture is so delicate that it literally melts in your mouth.This salt biscuits are best tea time snacks ever!Lets see how to make salt biscuits…

how to make salt biscuits/bakery(hyderabadi)style

INGREDIENTS:

All purpose flour/maida – 1 cup
Butter – 1/2 cup(room temperature)
Salt – 3/4 tsp
Powdered Sugar – 3 1/2 tbsp
Milk powder – 3 tbsp
Custard powder – 2 tbsp
Baking soda – 1/2 tsp

METHOD:

1.Salt,sugar,custard powder,milk powder and baking soda should be measured and kept ready.
2.Cream all-purpose flour and butter nicely first by mixing it with hand and then you can use a hand mixer to beat well for 5-8 minutes till fluffy.
3.The color will change to pale yellow.
4.Now add all the powders and again beat it to combine and it crumbles.
5.Using your hands combine the mixture and form a smooth dough.
6.Now pre-heat oven at 180 degree centigrade for 8-10 minutes.
7.Dust flour nicely to the counter you are going to roll so that it does not stick.
8.The dough will be sticky so be patient and pat with hand itself to flatten it and use a rolling pin to even out the sheet.
9.Press with desired cutters and place it in a oven plate with butter paper on it.
10.Prick the biscuits with fork.
11.Keep it in oven and cook it for 17 minutes.
12.On the 15th minute check and take out accordingly (because the time differs from oven to oven)
13.Take out when slightly golden and cool down.

Notes

In my oven it took 17 minutes to bake it is not the same for all the ovens.
It seems they add ammonia instead of baking powder/soda!but I have added baking soda instead.
When using hand blender the flour will fly all over so use the hands first to mix and then the hand mixer.
The dough will be sticky so be patient and pat with hand itself to flatten it and use a rolling pin to even out the sheet.

    I hv been looking for this recipe for years.. there are recipes for butter biscuits but not salt bisxuits.. finally found it and tried it.. they are currently baking in the oven.. tested one small piece and they taste just lik they shud.. thank u so much.. my most favorite biscuit can be made any time now..

      Hi aditi,
      You can use same one cup for replacement or use half and half of both flours and try.
      But,haven’t tried with wheat flour so I do know about the end result.
      If you try with wheat flour please share here about the result I will be glad to learn.
