coconut milk porridge /thengai paal kanjiThere is confusion and controversies going on about including coconut in our daily diet because the fats are harmful.But I read it somewhere the positives of using coconut is that you can use it without any hesitancy.The fact says that you should not boil the coconut milk for longer time as it will breakdown and the goodness (real benefit) of coconut is all gone in the wind.But still for some Indian curries/gravies we use ground coconut where we have to boil for some time because its our own traditional way that we are following through ages till now.coconut milk porridge /thengai paal kanjiFor now I will only take into concern that on the whole coconut is beneficial!same with this super special porridge named as coconut milk porridge /thengai paal kanji where the coconut milk added is the real hero.This kanji is mainly consumed to soothen the stomach and mouth ulcers!it has such a high quality healing property within it.coconut milk porridge /thengai paal kanji an apt drink to cool our body tastes great when warm or even can cool for few minutes and have it.Even I have tried it with some ice-cubes it was very refreshing as the summer heat is melting away our souls here(South-India). But traditionally it’s served warm with thogayal as it is one the chettinad specialty.

INGREDIENTS:

Raw rice(broken)or arisi kurunai – 1/2 cup(you can crush it in a mixer for easy cooking)
Fenugreek / vendhayam – 1 tsp
Garlic cloves – 4-5
Salt to taste
Coconut milk – 1 cup(thick)or diluted means 2 cups

METHOD:

Total Time: 25 minutes

Ingredients

  • Raw rice(broken)or arisi kurunai - 1/2 cup( or you can crush whole rice in a mixer for easy cooking)
  • Fenugreek / vendhayam - 1 tsp
  • Garlic cloves - 4-5
  • Salt to taste
  • Coconut milk - 1 cup(thick)or diluted means 2 cups

Instructions

  1. Boil 3 cups of water when it boils add rice,fenugreek and garlic altogether stir in and close the lid.
  2. Inbetween add salt.
  3. Open the lid and stir now and then till its cooked tender.
  4. Switch off.
  5. Now using a masher mash well.
  6. After it cools down a little bit add coconut milk stirr nicely.
  7. You can dilute it according to your comfort.

Notes

You can simply use a pressure cooker to cook the kanji. You can make the kanji thick or thin that's your own preference. It can't be kept long as we are adding coconut milk. You can serve it chilled or warm.
