walnut cake recipe eggless /vanilla frosting walnut layer cake

Total Time 50 minutes

Ingredients
  

  • All purpose flour/maida - 11/4 cups
  • Roughly powdered Walnuts - 1/2 cup
  • Baking powder - 1/2 tbsp
  • Baking soda - 1/2 tsp
  • Salt - a pinch
  • vanilla essence - 1 tsp
  • Butter - 1/4 cup +1 tbsp
  • Sugar I have used natural organic sugar - 1/2 cup
  • Curd beaten - 1/4 cup
  • Lemon zest - a pinch
  • Lemon Juice - 1/2 tsp
  • Milk - 1 cup boiled,room temperature
For icing and decoration:
  • Butter cream icing as needed
  • Piping bag with star nozzle any preferred nozzle as you may like
  • Some whole walnuts to put on the cake.
  • Some walnut powdered sprinkles

Method
 

  1. Keep everything ready.
  2. Sieve flour with salt,baking powder,baking soda and keep ready.
  3. In another bowl cream sugar and butter till light add curd and walnuts and mix well.
  4. Add vanilla essence,lemon zest and juice,mix.
  5. Then next simultaneously add milk and flour,beat well.
  6. In-between ready a baking pan(6 inch) by greasing it with butter ,line with parchment and if you want dust some flour also.
  7. Pre-heat at 170 degrees for 10 minutes.
  8. Pour batter into prepared pan.
  9. Bake it for 30 minutes or until a skewer comes out clean.
Frosting the cake.
  1. Cut the cooled cake into half.
  2. Put the cream in-between the half.
  3. Then close it and cover the cake or crust coat cake and keep it in fridge for 1 hour.
  4. After that take out ,again add buttercream with a spatula and coat for second time and pipe with your own decorations.
  5. I have used a star nozzle and pipe the cake.
  6. Decorate with some walnut powder and walnuts.
  7. (I first covered cake with aluminium foil for ten minutes to avoid over charring of top layer then I removed it and baked till done)

Notes

Oven temperatures differs with various oven so, set the temperature accordingly.
I baked by covering the cake with aluminium foil for 10 minutes then removed it and baked.
Cool the cake before frosting the cake.
You can use a parchment paper to cover the cake instead of aluminium foil.
