- Heat Kadai with Oil add Mustard to splutter.2.Now add roughly torn pieces of green& red chillies.3.Some curry leaves.4.Add Squashed Small onions Saute.5.When Onion s becomes Translucent add Chopped tomatoes.6.Add needed salt now for tomatoes & onions to cook.7.Close with lid let it cook.8.Open stir well dd Turmeric powder & stir.9.Then Sambar Powder mix well to remove the rawness.10.Now add 2 cups of water let it boil.11.Mix 2 tbsp of Besan With little water beat without lumps & to boiling sambar.12.Again add salt as per need.13.Let it boil for 5 minutes you can adjust the consistency by adding more water.14.Switch off Add some chopped coriander.15.Serve hot with Idli Or Dosa.

Notes
- Squashing the small onions gives more flavour.
- Cook tomatoes well — they form the base of this sambar.
- Besan must be mixed lump-free, or you’ll get clumps in the sambar.
- Adjust water depending on the consistency you like.
