- 1.Wash horse gram & this to pressure cooker & saute till nicely aromatic & colour changes.2.Now add 2 cups water add needed salt for the horse gram close & cook for 10-12 whistles.3.In between soak big lemon sized tamarind in water squeeze & filter.4.To this add roughly chopped tomatoes & nicely mash with hands so that it mashes & imbibes with tamarind juice.5.Keep a kadai add coriander,cumin& pepper saute till nicely aromatic now add some coriander & curry leaves,greenchillies & saute nicely.6.Grind this mixture with water add garlic cloves with skin whisk 2-3 times take out & keep.7.When pressure subsides open cooker when horse gram is cool grind with cooked water.8.Now add this to tamarind-tomato mixture add more washed water then add the ground paste with more water.9.Check for tanginess if needed dilute & keep.10.To Make Tadka add oil, then mustard to splutter.11.Then add dried red chillies,Asafoetida then pour the horse gram mixture to this.12.Add turmeric powder then some jaggery powder.12.Add salt & let it foam up you will see boil in the middle now you can add some coriander leaves & switch off.13.Serve with hot rice & enjoy.

Notes
- Roast the horse gram (kollu) until aromatic and slightly darker before pressure cooking.
- Pressure cook the kollu until it becomes very soft so it can be easily ground.
- Use ripe tomatoes for a naturally sweet and tangy rasam base.
- Adjust the tamarind according to its sourness; too much can overpower the roasted spices.
- Roast coriander seeds, cumin, and pepper on low to medium heat to avoid burning.
- Adding garlic with the skin while grinding gives the rasam a deeper aroma and flavor.
