How to Make Traditional Ellu Mittai

Ellu Mittai, also known as Sesame Chikki or Sesame Brittle, is one of the most loved traditional Indian sweets.

Ingredients
  

  • Black Sesame seeds - 3/4 cup /105 gms

    Roasted Peanuts(skin removed) - 1/4 cup/ 30gm

    Jaggery(powdered)(tightly packed) - 1 cup/ 200gms

    Water for jaggery - 1/4 cup

    Ghee - 1 tsp

    Some ghee for smearing

Method
 

  1. Heat a kadai add black sesame seeds & roast in medium flame till it pops take out to cool.
    2.When its cool add to a mixer pulse it once or twice you will get broken sesame seeds take out keep ready
    3.Then take roasted peanuts without skin crush it roughly in a mixer jar & keep.
    4. In between grease a butter paper with ghee & keep ready.
    5.Add jaggery to a pan with 1/4 cup water let the jaggery dissolve then filter it through a sieve.
    6. Heat this syrup let it boil & thicken keep stirring.
    7.At one stage when you check by dropping in a bowl of water you will be able to break the jaggery syrup this is the right consistency.
    8. Now add 1 tsp ghee & mix.
    9. Add the pulsed ellu & crushed ground nut mix well then switch off.
    10. Add this to a greased butter paper & spread using a greased flat base you can keep another greased butter paper over && spread evenly.
    11. Remove the paper on top cut shapes before it sets & let it cool.
    12. When its cool its all ready crispy break & store in airtight container & enjoy.

Notes

  • Roast sesame seeds only until they pop.
  • Never overcook the jaggery syrup.
  • Always test the syrup in cold water.
  • Work quickly after mixing.
  • Cut before the mixture hardens.
  • Store only after cooling completely.
