How to Make Soft & Creamy Curd Rice at Home

Ingredients
  

  • To cook Rice:

    Raw rice - 1 cup

    Water -2 cups

    Milk - 2 cups

    To Make Curd Rice:

    Butter - 1 tbsp

    More Water - 2-3 cups

    Curd - 11/2 cups

    Needed Salt

    For Tadka:

    Oil(groundnut) - 2 tsp

    Mustard - 1 tsp

    Urad dal(split) - 1 tsp

    Bengal gram dal - 1 tsp

    Asafoetida - 1 tsp

    Chopped green chillies - 1-2

    Chopped red chillies(seeds removed) - 1-2

    Minced ginger - 1 tsp

    Some curry leaves

    For Garnish:

    Some pomegranate seeds(optional)

    Some grapes(optional)

    Some chopped coriander leaves

Method
 

  1. First wash rice 2-3 times then add this to a cooker with 2 cups milk & 2 cups water with needed salt to rice.
    2.When it boils close the cooker & leave for 4-5 whistles & switch off.
    3.When pressure subsides open cooker mash rice nicely.
    4.Let the rice cool add 1 tbsp butter mix nicely to combine.
    5.Add 11/2 cups curd & mix nicely.
    6.While mixing you can add needed water to bring to a correct consistency.
    7.For Tadka heat a pan with oil add mustard to splutter.
    8.Add urad & bengal dal let it become golden.
    9.Then add hing, green chillies, minced ginger, curry leaves mix & switch off.
    10.Add this t the curd rice mix well.
    11.Serve chilled or immediately.
    12.Garnish with some chopped coriander ,pomegranate seeds& some grapes if you like.

Notes

1. Use Fresh Curd

Fresh curd gives the best taste and prevents excess sourness.

2. Add Milk

Milk keeps the curd rice creamy and prevents it from becoming dry.

3. Mash the Rice Well

Soft mashed rice creates restaurant-style creamy curd rice texture.

4. Do Not Skip Ginger

Ginger adds freshness and improves digestion.

5. Adjust Consistency Before Serving

Curd rice thickens over time, so add a little milk before serving if needed.
