how to cook mango rice (rawmango)mangaisadam

Ingredients
  

  • Cooked rice - 3 1/2 cups
  • Grated raw mango - 11/4 cup
  • Bengal gram dhal - 1 tbsp
  • Urad dhal - 2 tbsp
  • Gingelly Oil - 2 tbsp
  • Some curry leaves
  • Green chillies - 1-2 no
  • Red chillies - 2
  • Asafoetida - 1/4 tsp
  • Turmeric powder - 1/2 tsp
  • Salt to taste
  • Mustard seeds - 1 tsp
  • Roasted peanuts - 2 tbsp
  • Cashews - 6-7 no
  • Some chopped coriander leaves

Method
 

  1. First cook rice and spread it in a vessel,add some drops of oil and salt for rice, mix with fork so that it doesn't stick to each other.
  2. Fry cashews in oil and take out.
  3. In same oil put mustard to splutter,then add bengal gram dhal,urad dhal to brown,add red chilli,green chilli and curry leaves,then roasted peanuts.
  4. Now add turmeric and asafoetida.
  5. Add grated mango and mix till rawness goes with very-little salt for mangoes.
  6. Add rice mix nicely.
  7. Continue to stir for few minutes.
  8. Add cashews and chopped coriander leaves.
  9. Switch off and serve.

Notes

I have used both roasted peanuts and cashew-nuts to get extra nuttiness and crunch.
Mix the rice with fork so that it doesn't stick to each other.
A perfect firm raw mangoes are needed for making this raw mango rice.
Can use any type of oil ,I have used gingelly oil.
