Ingredients
  

Cooked rice - 3 cups
GingellyOil/Nallenai - 3 Tbsp

Mustard seeds - 1 tsp
Kadalaparuppu/Bengal gram dal - 1 tsp
Uluthamparuppu /Urad dal - 1 tsp

Cashewnuts or Peanuts - 3-4 tbsp

Some Curry leaves

Red chillies - 2

Asafoetida - 1 tsp

Salt

To roast & grind
Black Sesame seeds/Ellu - 1/4 cup/30 gm

Black Urad dal - 1 tbsp

Bengal gram dal - 1/2 tbsp

Pepper - 1 tsp

Some curry leaves

Dry red chillies - 3

Method
 

1.Heat a kadai add black sesame seeds dry roasts till it nicely pops take out.

2.Next to same kadai add black urad dal, channa dal, pepper curry leaves& dry red chillies & roast nicely when nice aroma comes & when channa becomes golden take out when cool grind all the to grind ingredients & keep ready.

3.In the same pan add 4 tbsp oil add mustard to splutter then add channa dal & urad dal, then cashews to become golden add some curry leaves, red chillies & hing.

4.Add cooked rice to this with needed salt mix nicely add this pod & mix nicely & switch off.

5.Aromatic ellu sadam is ready.

    Notes

    • Use medium heat while roasting the sesame and spices.
    • Keep a close eye on the sesame seeds because they can burn quickly.
    • Let all roasted ingredients cool before grinding.
    • Adjust salt according to the amount of cooked rice.
    • Gingelly oil adds the best traditional aroma, but the quantity can be adjusted to personal preference.
    • For a softer rice texture, use freshly cooked rice that has cooled slightly before mixing.
