Eggless Christmas fruit cake / Instant no soaking shortcut recipe

Ingredients
  

  • INGREDIENTS:

    All purpose flour - 200 gms

    Cocoa powder - 5 gm(1 tbsp)

    Condensed milk - 120 gms

    Butter(unsalted) - 90 gms

    Baking soda - 1/4 tsp

    Baking powder - 3/4 tsp

    Salt - 1/4 tsp

    Sugar(granulated) - 50 gms

    Water(hot) - 240 ml/1 cup

    Soda water - 120 ml /1/2 cup

    Mixed fruits and nuts(cashew,badam,

    kismis,blackgrapes,tuttifrutti) - 260-270 gms/ 11/2 cups

Instructions
 

  • Chop nuts of your choice with some fruits (Mixed fruits and nuts(cashew,badam,kismis,blackgrapes,tuttifrutti) keep ready.
    2.Prepare a 6” pan with butter & line with parchment as shown.
    3.Take a pan & spread sugar switch on the stove it will start to melt and caramelize add hot water at intervals and let it boil.
    4.Now add the nut-fruit mixture let it cook for 5 minutes switch off and cool.
    5.Take a mixing bowl add condensed milk and butter beat till creamy.
    6.Add in the cooled fruit-nut mix & mix.
    7.Now sieve in maida,cocoapowder,salt,bakingpowder and baking soda and mix.
    8.Add soda water at intervals and mix to a shown consistency.
    9.Inbetween preheat oven at 180 deg.
    10.Pour the mixture to the prepared pan garnish some nuts.
    11.Bake at 180 deg for 1 hr & 25 minutes.
    12.When skewer inserted come out clean take out cover with towel and cool.

Notes

  • As always said please see that each oven differs in its cooking time so bake accordingly.
  • If your top browns too quick cover with a piece of parchment or aluminium foil.
  • You can use nuts of your choice.
  • You can use any dry fruits like figs, dates even any berries.
