Easy Drumstick Sambar Recipe | Murungakkai Sambar

Ingredients
  

For Tempering:

Ghee - 2 Tbsp

Mustard seeds - 1 tsp

Fenugreek seeds - 1/4 tsp

Some Curry leaves

Vadagam - 2 tsp(optional)

Asafoetida - 1 tsp

For Sambar:

Toor Dal / Thuvaram Paruppu - 3/4 cup

Moong dal - 2 Tbsp

Castor Oil - 1 tsp

Tamarind juice(lemon size tamarind soaked & extracted)

Drumsticks - chopped

Tomatoes - 2-3 medium chopped roughly

One handful Small Onions

Garlic cloves with skin - 6-7

Sambar Powder - 2 Tbsp

Turmeric Powder -1 tsp

Jaggery / Vellam - some

Needed salt

Needed water

Method
 

1. Keep ready by taking extract from soaked tamarind.
2. Pressure cook toor dhal with castor oil by adding needed water.

3. Pound Smallonions & Garlic in a mortar & pestle.

4. When pressure subsides open cooker mash a little add chopped tomatoes, crushed garlic-onion,turmeric powder,sambar powder, chopped drumsticks needed rock salt & water for the sambar.

5. Now bring to heat and let the drumstick & all contents cook.

6. Adjust the consistency if needed with more water.

7. When veggies are cooked add the extract and boil till the rawness of tamarind subsides.
8. Now take ghee in a pan.
9. Add mustard seeds and when it splutters add asafoetida.
10. Add vadakam and curry leaves switch off.
11..Now add this to sambar and switch off ,radish sambar is ready to be served with rice.

 

    Notes

    • Use fresh drumsticks: Fresh, tender drumsticks give the best texture and flavor.
    • Do not overcook the drumstick: Cook just until tender so the pieces hold their shape.
    • Boil the tamarind well: Make sure the raw tamarind smell disappears before finishing the sambar.
    • Adjust the consistency: Add hot water little by little to get your preferred consistency.
    • Let the sambar simmer: Simmer for a few minutes after adding the dal so all the flavors blend beautifully.
    • Temper at the end: Add fresh tempering just before serving for a wonderful aroma.
