simple cookies with foxtail millet/Thinai biscuit

Ingredients
  

  • Fox-tail millet flour - 3/4 cup
  • Palm sugar powdered - 3/4 -1 cup
  • All purpose flour - 1/4 cup
  • Baking powder - 3/4 tsp
  • Cooking oil or olive oil - 1/2cup
  • Almonds - 15-20
  • Cashews - 5-8
  • cardamom powder - 3/4 tbsp
  • Some slivered almonds and sugar crystals to press on the biscuits before baking

Instructions
 

  • First buss out cashews,almonds together with cardamom powder.
  • Now add powdered palm sugar to it and make one or two whisks.
  • Keep aside.
  • Add all purpose flour,fox-tail flour and baking powder together sieve and take it in a large bowl.
  • To it add the almond mixture.
  • Mix well.
  • To this add the oil and make a dough.
  • Now when we start making shapes preheat the oven at 180 degree for ten minutes.
  • Roll out evenly by covering it cling film so that it will not stick.
  • Now make shapes with suitable cutter.
  • Sprinkle and press some sugar and some slivered almonds over it.
  • Grease a baking tray and arrange.
  • Now bake it in a preheated oven for 7-8 minutes.
  • Repeat the process till all the dough is used.
  • After it give a standing time for 20-25 minutes.
  • Now you are ready with delicious fox-tail millet cookies.

Notes

Palm sugar can be substituted with any other sugar.
In place of oil olive oil can be used.
When baking preheating is most important.
The cooking time should be noted carefully otherwise it burns.
Make thin cookies as possible because if it is thick the center becomes uncooked and the coking time should be increased for this.
Use any plastic sheet while rolling to avoid sticking.
Fox-tail millet flour is readily available or you can grind the whole millet by slightly roasting it.
