In a mixing bowl add wheat flour, rice flour, chopped onion, salt, jeera, minced ginger, minced green chilies, chopped curry leaves, and coriander together with needed salt. 2.Gradually add water and mix to make a smooth batter thin batter. The consistency should be very thin batter (too runny).3.Heat a non-stick or cast-iron dosa pan high heat.4.Splash the batter onto the dosa pan.5.Drizzle a few drops of oil all around the edges & centre of the dosa.6.Cook until the edges start lifting and the bottom turns golden brown.7.Flip the dosa and cook the other side for a minute or so.8.Golden crispy Instant dosa is all ready serve with any spicy chutney or gravy of you choice.
Notes
Ensure the batter is of the right consistency. It should be relatively thin, almost like a buttermilk consistency
Spread the batter thinly and evenly on the hot dosa pan. This aids in quicker cooking and better crisping.
Don't flip it too soon; let it cook sufficiently on one side for crispiness.
