meal maker biryani recipe /soya chunks biryani

Ingredients
  

  • Soya chunks/mealmaker - 1 cup(120 gms)

  • Basmathi rice - 221/2 cups

  • Water to cook rice - 43/4 cups
  • Needed water for cooking soya chunks

  • Curd - 1/2 cup

  • Ginger garlic paste - 4-5 tbsp

  • Green chillies - 2-3(slit)
  • Coriander and mint leaves - a hand full

  • Tomatoes - 2(puried)

  • Big onion - 1(thinly sliced)
  • Cloves -2-3

  • Cardamom - 2

  • Bayleaves - 2

  • Cinnamon - 1

  • Garam masala - 2 tsp

  • Chilli powder - 11/2 tsp

  • Salt as per need

  • Coriander powder - 1 tsp

  • Turmeric powder - 1 tsp

  • Ghee - 3 tbsp

  • Lemon juice - 1 tbsp

  • Oil - 2 tbsp

Instructions
 

  • Boil sufficient water in a pan add soya chunks with some salt and after 10 minutes switch off the stove and drain, run through cold water, squeeze water break or chop the chunks if you want.
    2.Now add half of the garam masala, turmeric and chilli powder with a hit of salt.let it marinate.
    3.Now keep every thing ready before starting the cooking process soak basmati rice for 15 minutes.
    4.Now after 15 minutes drain water add a tsp of ghee in a kadai add this basmati rice fry for a minute and keep ready.
    5.Keep a thick bottomed cooker add ghee and oil, add cloves, cinnamon, bayleaves and cardamon.
    6.Then add onion to brown, then add ginger garlic paste and saute for some time.
    7.Now add soya chunks with green chillies saute for some time.
    8.Add rest of the masala powders, tomato puree, coriander mint leaves and mix.
    9.Then add curd mix well.
    10.Now add 43/4 cups of water with needed salt.
    11.When it starts to boil add rice and let it all boil finally add lemon juice mix.
    13.Close the cooker with whistle.
    14.Leave it for only for a sound then keep the flame in simmer for 2-3 minutes.
    15.Switch off and when pressure is gone open fluff up rice and serve hot with onion raita.

Notes

I have used some big ones of soya you can use the smaller ones.
If the soya chunks are of big size just slice it to pieces and do the recipe.
Instead of water you can use coconut milk.
Add spices according to your taste.
Squeeze the soya chunks nicely so that it will not have any soya smell.
I have done it in pressure cooker you can do it in a pot well known as dum method.
Don’t soak basmati rice for longer because when it cooks it becomes mushy.
