tutti frutti cake eggless recipe / marudhuskitchen

Ingredients
  

  • All purpose flour/ maida - 90 gms

  • Corn flour - 10 gms

  • Castor sugar - 75 gms

  • Curd - 105 gms

  • Baking powder - 2 gms/1/2 tsp

  • Baking soda - 1 gm/1/4 tsp

  • Butter - 60 gms

  • Salt - a pinch

  • Vanilla essence - 1/2 tsp

  • Tutti frutti and some cherries - 40 gms

  • Some flour for mixing tutti frutti

Instructions
 

  • To all purpose flour add baking powder.baking soda and salt sieve all ingredients mix well and keep ready.
    2.In a bowl add some flour to tutti frutti and cherries and keep ready.
    3.Take a bowl with butter and sugar with some vanilla essence beat till fluffy and pale.
    4.Then add curd beat well for a minute.
    5.In-between preheat oven at 180 degrees for 10 minutes.
    6.Add dry flour little at a time mix well till all the flour is used up.
    7.Lastly add fruits and fold well.
    8.In-between smear a baking pan with butter and line with parchment.
    9.Pour in the lined pan tap well and you can garnish some more dry fruits on top bake it for 25 to 30 minutes or do it till skewer inserted come out clean.
    10.Take out when done and leave for 10 minutes then you can slice and enjoy.

Notes

I have used only tutti frutti and cherries but you can add some nuts of your choice.
Baking temperature differs from oven to oven so bake accordingly.
If you don’t have castor sugar you can use powdered sugar.
Beating butter and sugar till fluffy is crucial for the outcome of the cake.
Instead of butter you can replace it with any flavourless oil.
You can replace flour with wheat flour and try.
