indian sweet kaju katli /cashewnut katli

Total Time 40 minutes

Ingredients
  

  • Cashews - 1 cup
  • Powdered sugar - 1/2 cup
  • Ghee for greasing and 1/2 tbsp to the mixture
  • Water for sugar syrup - 4tbsp

Instructions
 

  • Grease polythene sheet with ghee on both sides with a rolling pin keep ready.
  • Heat up cashews in a pan and allow it to cool or else keep it a microwave for 2 minutes and cool.
  • Then grind in whipper mode so that it becomes nice powder.
  • Same way grind sugar and make powder of it.
  • Keep a pan add water and sugar bring to boil.
  • check for one string consistency pressing between two fingers.
  • Bring flame to low and add the powder and when thick.
  • Add a 1/2 -3/4 tbsp of ghee.
  • Stir well and at a stage when able to make a ball.
  • Transfer it to a bowl and stir well with a spoon and it will thicken well and when slightly cool use your hands to knead the dough to become smooth and pliable.
  • Keep in-between two polythene sheets and roll flat.
  • Cut to diamonds and take out the diamonds and your kaju katli is ready.

Notes

When you transfer it to a bowl it will be very hot and stir only with a spoon.
But after sometime it will become manageabley hot that you can handle it to form a smooth dough.
Polythene sheet,cling film or even a aluminum foil can be used for rolling.
Roll it to the thickness you prefer it to be.
Usually for this no flavoring are added but if you like you can add rose essence or even cardamom powder.
Only whisk the cashews and never grind otherwise it will form a paste.
I have used less sugar but you can add 3/4th cup of powdered sugar.
