This vella aval recipe is one of its kind that can be easily made without any confusion. Not only for festive occasions but it can be made any time as a healthy snack. I have used thick aval but you can use those thin variety. Even red aval can be used but you have soak it well and add the jaggery syrup so that it cooks all well. Procedures may differ for making this aval puttu but my kind of making is little different but definitely tasty. At first after making poha will be little wet but after sometime it will come to a puttu consistency. Its one the special sweets made during gokulashtami and even for navarathri. Some use sugar instead of jaggery for making this
vella aval recipe. But personally I love the taste with jaggery. As we are roasting the coconut and even aval it can kept good for two to three days. If you like adding coconut you can add more of it. Don’t skip adding ghee which gives wonderful aroma and taste.Actually its very filling and tasty that you wouldn’t be hungry for long hours. For this Gokulashtami make this wonderful vella aval recipe as neivaidyam and enjoy.

INGREDIENTS:
Geeti aval(white) /poha – 1 cup
Jaggery – 3/4 cup
Cardamom powder – 2 tsp
Grated coconut – 3/4 cup
Salt a pinch
Water -1 cup
Some chopped cashews
Ghee – 2 tbsp
METHOD:
1.First give a quick wash to aval drain immediately Keep a kadai with spoon of ghee add this aval dry roast for few seconds with a pinch of salt and take out in a bowl.
2.Now in the same kadai add rest of ghee with some broken cahewnuts roast them till brown.
3.When cashews are brown add coconut and stir in till nice aroma is released.
4.Take this in another bowl and keep ready.
5.Keep a kadai with powdered jaggery add water and bring it to boil when its dissolved strain for dust .
6.Now add the roasted aval to this hot jaggery syrup and close with a lid.
7.Poha will absorb the jaggery syrup and bloom now add the roasted cashews and coconut .
8.Stir in well with cardamom powder.
9.Now again close with a lid.
10.When you serve after sometime it will become like puttu texture.

Notes
- You can first wash and soak the aval till it blooms then you can add thick jaggery syrup instead.
- I have used thick aval variety.
- You can use the thinner flat aval.
- Even a pinch of nutmeg powder can be added if you like the flavour.
