make it as medium thick slices not too thick or thin so that it cooks through well. Even without ginger and garlic paste it will be tasty and have added some fennel seed powder for extra flavour. Adding bengal gram flour is to combine and bind the ingredients well. Fry as each piece separately so that it cooks well and outer is nice and golden. If you want more colour can add some kashmiri chilli powder. Select nice fresh raw bananas which are firm and intact. Adjust the spice mix according to your own taste and spice level. valakkai fry recipe / vazhakkai masala varuval
INGREDIENTS:
Raw banana/vazhakkai – 2 no
Oil – to shallow fry
for masala:
Chilli powder – 4 tsp
Garam masala powder – 2 tsp
Salt to taste
Saunf/sombu powder – 1 tsp
Ginger garlic paste – 2 tsp
Lemon juice – 1 tsp
Coriander powder – 1/2 tsp
Turmeric powder – 1 tsp
Some curry leaves
Kadala maavu/bengal gram flour – 3 tbsp
METHOD:
1. Wash the raw banana then peel the skin.
2. Slice it into roundels in a mandoline slicer or by knife.
3. Now add all the items mentioned in the “for masala” section.
4. Mix it thoroughly until combined.
5. Let it marinate for 20 minutes.
6. Heat a thick pan with minimal oil to shallow fry.
7. Fry in medium high heat then and there adjusting the flame.
8. Till golden take out in a tissue.
9. Serve as a side dish for sambar sadam or curd rice.

Notes
While slicing itself transfer to a bowl of water till you marinate the valakkai.
I have used a slicer you can slice even pieces with a knife.
Keep the flame at medium high or adjust so that the raw bananas are well cooked.
