Sometimes we feel bored and literally irritated to do any elaborate cooking at home. In such a mind set this type of one shot dishes will be really handy. Not only that we can make it within few minutes if we keep every thing ready. This thakkali pulao is very easy recipe to make in no time as a packed lunch for kids or for office. I have used coconut milk for more taste and flavour. Without adding coconut milk also this tomato pulao recipe taste equally good. Nice ripe tomatoes will be great for making this type of variety rice. For spiciness we add only green chillies and chilli powder is not needed but if you add both it will be little spicy. Basmati rice gives nice flavour but you can use normal parboiled rice or even seeraga samba variety. You can have it with simple
raita, pappadams or a simple pickle will do. I have pressure cooked it for one whistle and left it to cool. As already we have soaked the rice it cooks faster and blooms up nicely. Saute the ground ingredients before adding water so that we get a nice flavourful pulav. If you prefer to add vegetables you can add some carrots beans or peas it will be very nice. Do try this thakkali pulav and enjoy the comfortness and taste at its best.

INGREDIENTS:
Basmati rice – 1 cup(250 gms)
Tomatoes /thakkali – 1 cup(chopped into chunks)
Water+coconut milk – 13/4 cups
Salt as per taste
Turmeric powder – 1 tsp
Cinnamon/pattai – few
Cloves – 2-3
Caradamom -2-3
Broken cashew nuts – some(optional)
To grind:
Green chillies – 2
Coriander leaves(handfull)
Chopped onion – 4-5 tbsp
Ginger garlic paste – 4-5 tsp
METHOD:
1.Wash and soak basmati rice for ten minutes and drain.
2.Keep every thing ready take extract from coconut chop tomatoes and onions.
3.Take a mixer jar add coriander, green chillies, onions, and ginger garlic paste.
4.Add some water and grind it to a coarse paste and keep ready.
5.Keep a pressure cooker add oil-ghee combination and when it heats up add cinnamon, cloves and cardamom.
6.Then the cashews to become golden.Now add the ground mixer.
7..Let it cook and leave oil now add tomatoes needed salt then turmeric powder and stir.
8.Add measured amount of water and coconut milk.
9.Let it boil now add soaked and drained basmati rice.
10.At one stage water level and rice becomes equal.
11.Now close cooker put on weight.
12.Leave it for one whistle and when its cool open cooker fluff up rice and serve hot.

Notes
- Instead of green chillies you can add chilli powder or even both.
- Always soak basmati rice for at least 10 minutes.
- Use nicely ripened tomatoes.
- Using ghee gives nice flavour to this variety rice.
