Pickles in India has diverse variations each region have their own making methods.Each variation is made special to that region and are famous and finger licking good. Most of the pickles needs oil in it but exceptionally this sweet lemon pickle indian recipe doesn’t need one. My grandma used to say that pickles should be done with only clean hands and handled with same care and caution. Otherwise it will be spoilt soon. Always use sterilized jar to store pickles.This sweet lemon pickle indian recipe can be done instantly by boiling lemons,but I love the authentic way it delays the process,yet tastes delicious. Totally loved the sweet,sour and spicy taste of this pickle While making pickles use crystal salt rather than powdered one.Please check my spicy version of lemon pickle here. Even some mustard and fenugreek seeds can be roasted golden to powder and added.But,I have only added ginger powder for flavour and taste.

INGREDIENTS:
Medium lemons – 12-15
Crystal salt – 1/4 cup
Sugar – 1 cup
Chilli powder – 4-5 tbsp
Dry ginger powder – 11/4 tsp
METHOD:
1.Wash lemons and pat dry in a towel with no water.
2.Now cut lemons into small triangles take out the seeds as much as possible.
3.After cutting transfer to a glass jar or a porcelain dish,add salt and mix well(Jar should be sterilized well).
4.Now cover the jar with a muslin cloth and keep under sunlight for a week.
5.Stir daily and now the lemons will be nicely cooked and tender with salt and its own juice.
6.Now transfer this to a heavy bottomed pan add,chilli powder,sugar and ginger powder.
7.Bring to heat by mixing it well.
8.Now the sugar will dissolve ,simmer the flame.
9.Keep this as it is for 5-10 minutes.
10.Switch off and transfer to a sterilized jar you prefer and store.
11.Sweet and sour lemon pickle is ready to be served

Notes
This lemon pickle is an excellent side dish for a simple curd rice or with any thing you may prefer.
The Jar to be stored should be sterilised well so that it stays well for longer.
If you want more sweetness you can,but this quantity itself was more perfect for me.
Its a traditional method but it can be done by boiling the lemon instantly.
