The roasted gram powder laddu/maa laddu is one of the famous sweet’s of Tamilnadu!of-course it is named differently in different languages! it is easy to make and the aroma of the ghee and roasted gram flour combined gives a divine taste.Roasted gram powder is called chutney dhal from which coconut chutney’s,thuvayal’s are made!Roasted gram powder is a common ingredient in all South Indian homes.Roasted gram itself is a ready-made any time snack to have and I usually use this roasted gram powder in my gravies to thicken!Coming to our laddu making the ghee should be hot enough(not bubbling hot) to pour into the mixture!that’s where the roasted gram powder laddu get’s a flavor lift.Usually two to three tablespoon’s of ghee will be remaining after adding the ghee to the mixture,so just concentrate(cautious)while adding ghee.Now we are into the process of making maa laddu/roasted gram powder laddu(pottukadalai)..
Roasted gram powder laddu(pottukadalai)/maa laddu
INGREDIENTS:
Roasted gram dhal/Pottukadalai – 3/4 cup
Sugar – 1/2 cup
Pistachio’s – 1 tbsp (finely chopped)
Cashewnuts – 2 tbsp(finely chopped)
(both should be roasted in ghee and kept ready)
Ghee – 1/2 cup(2-3 tbsp less than 1/2 cup)
Cardamom powder – 1/4 tsp
METHOD:
1.First grind roasted gram with half of the roasted nut’s finely.
2.Then grind sugar with cardamom powder.
3.Mix it in a bowl and add remaining nuts to it.
4.Now add the hot ghee slowly little by little.
5.Stop adding ghee when you are able to make a ball.(some left over ghee will be there)
6.Make balls and you are ready.

Notes
I have added correct sugar according to our taste,you add gram and sugar mixture in 1:1 ratio according to your need.
But when adding 1:1 ratio I feel it becomes much sugary.
