This mavu rice gives more volume than any other variety of rice. If this rice is not available you can use regular ponni rice which is parboiled or sona masuri. This rice flour homemade recipe is the most needed item here in South India for making any type of murukus and snacks. I totally love-making iddiyapam and sevai’s with this rice flour homemade recipe,its soft ,fluffy and totally comforting. If you are making in small batches you can use your mixer jar itself,but when the quantity is big then give to a flour mill and get the work done.

INGREDIENTS:
Raw rice/pacharisi/mavu arisi – 2 cups
METHOD:
1.First wash the rice thoroughly in running water.
2.Soak it in water for minimum 45 minutes.
3.Drain the water from rice and spread it a cotton cloth under a ceiling fan.
4.The rice will become dry but when you press it with your hands it will stick to your hands.
5.This is the right consistency.
6.Now you can send to a flour-mill and grind it finely or if using mixer jar grind it finely then sieve it.
7.Then again grind the left over sieved granules and sieve again.
8.This process should be repeated until all the rice is ground to a fine powder.
9.Now keep a pan and toss this flour in a very low flame(lightly heat up the flour).
10.Toss till you are able to make a kolam or straight line with the flour.
11.Now your flour is all set to be stored.

Notes
If the flour has to be used immediately then you need not dry roast the flour,you can use it directly.
You can make the flour even with any parboiled rice,it will come out very good.
