Maharashtrian batata vada recipeWhen it comes to street food then people forget all their social barriers mainly to have piping hot foods served simply with all mesmerizing flavours.I too love street food so much but there is no assurance that the food will always be hygienically served.Not to blame all but few serve it under un-hygienic conditions and for this reason we can very well make it fresh at the comfort of our own home.When searching for some maharastrian famous snacks I found out this famous snack(recipe of batata wada)resembling more on aloo bonda or urlaikilangu bonda. recipe of batata wadaThis recipe for Batata wada/vada is a top hit street food in North with minor changes in the stuffing like adding onions we get urlakilangu bonda/Aloo bonda here in the South.I have had this bonda from local street vendors but they add lot’s of soda which is too much for our tummy health.However there is one landmark street shop at my native where they make excellent bonda’s till now.They make it as small lemon-sized bonda’s and when we start to have it we literally would have eaten countless numbers.While making the batter the consistency should be correct and should beat the batter nicely before rolling it with the stuffing.Texture is more important so don’t mash potatoes smoothly.

INGREDIENTS:
For batter:

Chick pea flour/besan – 1 cup
Salt to taste
Asafoetida – less than 1/4 tsp
Baking soda – 1/4 tsp
Turmeric powder – 1/4 tsp
Chilli powder – 1 tsp

For stuffing:

Potato (boiled) – 4 (medium)
Salt to taste
Greenchilles – 2 chillies
Ginger – 1 inch
Garlic -4-5
Chopped coriander – 4-5 tbsp
Cumin powder – 1/2 tsp
Lemon Juice – few drops

For tadka:

Oil – 1 tbsp
Mustard – 1 tsp
Asafoetida – 1/4 tsp
Turmeric powder – 1/4 tsp

and oil to fry vada

METHOD:
Stuffing:

1.Lets first make the potato stuffing.
2.Grind greenchilli,ginger garlic to a paste.
3.Mash boiled potatoes not too smooth.
4.Add all the ingredients given in “for stuffing”section  to mashed potatoes except lemon juice.
5.Keep a kadai with oil.
6.Add mustard to crackle then add turmeric and hing immediately add the potato mixture.
7.Keep on stirring till all are combined well without any rawness.
8.Switch off add lemon juice mix and cool.
9.Now make balls and keep ready.

For vada:

1.Take a big bowl add “for batter ingredients” mix well by adding water.
2.The consistency should be like that it should coat the spoon when mixed.
3.Heat oil and when it is hot fry all the vada’s by dipping the potato balls in batter.
4.Fry over medium flame till golden and thoroughly cooked.
5.Take out in a tissue and serve.

    Love love loved the Batata Wadas sweetie. The way you click your food it becomes impossible for the onlooker to resisit it. I am taking back with me the two important points of right consistency of batter and a nice texture of the potato filling. No wonder the wadas look so perfect and supremely delicious. By the way I have fallen for those pots in the background. I think you have a great collection of earthenware.
