How to make kerala banana chips/nendran chips

nendran chipsNendran chips that are available in Kerala is always “one of its kind” and most of us when we visit Kerala we used to get some packets of nendran chips for our family and some for our neighbor’s!”Am I saying it right”? okay!In my place there are special hot chips shop’s where I can get fresh chips whenever am having a fondness for this!because it has been always a favorite snack for me among the other savory items!nendran chipsThis time when I went to vegetable market I got hold of some fresh raw nendran banana’s and my idea was fixed to do nendran chip’s any way!The Mandoline I use for shearing is a good old wooden slicer that is adjustable and I was able to get thin slices as I thought.There are two different ways of preparations!In the first method we slice and add salt-turmeric mixture,leave it for some time and then fry it in oil!For the second method we chop the chips directly to hot oil by sprinkling salt-turmeric mixture every now and then!I found out second method was easy for me.So am going to explain how to make kerala banana chips for you(the second one).

How to make kerala banana chips/nendran chips

INGREDIENTS:

Nendran banana/raw – 2-3 pieces(peel off the skin)
Oil/coconut oil for frying
Salt – 13/4 tsp
Turmeric powder – 1/2 tsp
Water – 1/4 cup

METHOD:

1.First peel the skin and keep ready.
2.Mix turmeric powder,salt and water and keep ready.
3.Heat oil in a kadai.
4.Slice raw banana over the oil directly keeping the flame medium.
5.Leave it to fry and when it turns slightly golden sprinkle the turmeric mixture little by little as needed for each batch.
6.When “shhhh” sound is over take it out in a tissue.
7.Then when it is hot transfer to a bowl and add some salt and pepper so that it sticks to chips.This step is purely optional.
8.When cool store in airtight containers.

  • Heat oil in a kadai.
  • Slice raw banana over the oil directly keeping the flame medium.
  • Leave it to fry and when it turns slightly golden sprinkle the turmeric mixture little by little as needed for each batch.
  • When "shhhh" sound is over take it out in a tissue.
  • Then when it is hot transfer to a bowl and add some salt and pepper so that it sticks to chips.This step is purely optional.
  • When cool store in airtight containers.

Notes

In some shops they add more salt and pepper after frying ,but it is purely optional.
If you find this method difficult you can slice separately,add salt turmeric mixture to the slice,leave it for some time and then fry it in oil.
Be careful when adding turmeric mixture!it may splutter.
Slices can be thick or thin according to your liking.
