The phase that we are undergoing now is the toughest for anyone in the world. Each one should be responsible and aware to eradicate this dreadful virus. Food plays an vital role to keep us healthy and resistant to such life-threatening situations. The food we take should be not only healthy but must be easily digestible. One such recipe is this khichuri an iconic delight made in bengali style. It is a very subtle and soothing dish and moreover its an excellent one pot meal to have any time. Use
mustard oil if you have or else can use any of the ordinary oil of your choice. But finally adding ghee enhances the total flavour of this wonderful dish. Some sugar is also added giving a sweetish taste but many won’t like it and don’t worry you can always skip it.You can very well make without adding any vegetables also and in this I have added some broccoli instead of cauliflower. For garam masala I have used a home ground masala of cardamom,cinnamom and cloves altogether. Of course can use store bought masala as well. Now lets keep it simple and make this bengali style khichuri recipe.

INGREDIENTS:
Basmati rice/biriyani arisi – 1 cup
Moong dal/pasi paruppu – 1 cup
Potatoes – 1 peeled chopped
Cauliflower/broccoli – 5-6 florets
Green peas – a hand full
Mustard oil/ or any other oil – 4 tbsp
Cumin seeds/jeera – 11/2 tsp
Bayleaf – 1-2
Onion – 1 big (chopped)
Turmeric powder – 11/2 tsp
Chilli powder – 1 tsp
Coriander powder – 1 tsp
Salt as per taste
Some more ghee to drizzle
Ginger garlic paste – 11/2 tbsp
Garam masala – 1 tbsp
Water – 8 cups
Lemon juice – 2 tbsp
Some chopped coriander
METHOD:
1. Wash and soak both rice and dal together for 30 minutes atleast.
2. Then add some ghee in a pan add rice and dal roast for some time and keep aside.
3. Heat a pressure cooker with ghee or oil add cumin and bay leaf.
4. Then add chopped onions to brown.
5. Now add ginger garlic paste saute nicely.
6. Add chopped veggies and stir in nicely.
7. Put in chilli, coriander and turmeric powder stir well till rawness goes off.
8. Then put in the garammasala put in eight cups of water with needed salt.
9. When it starts to boil nicely add the rice dal mixture.
10. Close the lid keep whistles till done.
11.When pressure subsides open add in some lemon juice stir in with some chopped coriander and serve hot with pappadam, pickle.

Notes
If you like adding tomatoes you can add.
Instead of ghee or oil you can add mustard oil while tempering.
Your choice of veggies may be different even without vegetable also it can be made.
Good pinch of sugar will enhance the taste but it can be skipped as well.
