This kavuni arisi is gummy by nature and I love the bite of this grain even if its well cooked. Here in my blog I have already done with Kavuni arisi payasam and kavuni arisi idli. Now its time to make most popular dish of chetinad the kavuni arisi sweet. Its very
simple to make and also very delicious. Definitely should soak the rice well in advance if you are in shortage of time also have to soak it at least for 2-3 hours in hot water. Other than that this kavuni arisi sweet is very easy to make believe me. Many use sugar for making this sweet but I prefer making it with jaggery or palm jaggery for more rounded and subtle taste. Adding ghee brings in all the aroma and flavour. Adding more coconut is our wish you can increase or decrease. Do try this special chettinad sweet this festive season for sure.
kavuni arisi sweet /chettinad black rice sweet
INGREDIENTS:
Black rice/kavuni rice – 1 cup(200gms)
Jaggery – 1 cup(powdered)
Grated coconut – 1 cup
Cardamom powder – 1 tbsp
Ghee – 1-2 tbsp
METHOD:
1.Wash and soak rice for minimum 8 hours or overnight then in the morning in a cooker add 5 cups of water to boil and add strained rice to it and pressure cook till nicely cooked.
2.The white part should show off when cooked(mashable).
3.Bring it under heat add jaggery and let it melt and combine with the rice then switch off and add cardamom powder,coconut and finally ghee stir well and serve.

Notes
- Cook the rice well otherwise we can appreciate the taste as well as we will not able to digest
- Amount of jaggery may vary according to taste.
