This month is a crazy season for making kozhukattai’s you are right! its vinayakar chaturthi on the way. Iam a die-hard fan of both savoury and sweet versions of these kozhukattai’s. It’s a healthy festive snack that is very tasty and addictive.Making a perfect mel maavu (outer covering) is very important.The consistency should be perfect so that we get a nice kozhukattai without any cracks. We usually soak rice,dry it and prepare or buy processed rice flour for making this kozhukattai. But this particular mel maavu for kozhukattai is very easy to do and it turns out perfect every time.Only thing we have to be careful is when mixing the ground rice in boiling water.It may form lumps,so constant stirring is necessary. We get a smooth flexible dough if we use the correct measure of water,if water is in excess then it may become sticky dough which is not at all suitable for this kozhukattai. Now let see how to prepare kozhukattai maavu by grinding method.

INGREDIENTS:
Pacharisi/raw rice – 1 cup
Water in total – 2 cups
Salt to taste
Oil or ghee to make dough – 1 tbsp(some extra needed for kneading)
METHOD:
1.Soak rice in water and before that wash it well.
2.Soak for 1 hour.
3.Now drain the water add this rice in mixer jar,add a cup of water and grind it smoothly to a watery consistency.
4.Keep a kadai or a thick vessel with another cup of water add needed salt and oil and let it boil.
5.When it boils reduce the flame and add the ground rice water very steadily without forming lumps.
6.Keep on stirring don’t leave in-between when the whole mixture forms a single mass,close the dough content with lid for some seconds.
7.Open and check with watered hands and when it does not stick that’s the consistency.
8.Transfer it to a plate when little cool start to knead to a smooth dough.
9.If you need you can add some more oil or ghee while kneading.
10.Now the dough is ready to make kozhukattai’s.

Notes
Raw rice is better than any other variety for making this kozhukattai maavu.
The water given will be correct amount for making this dough,if added more the dough may become sticky.
Use a nonstick kadai for making this kozhukattai mel maavu.
