There is one famous spot in my hometown Salem where chaat items are a big hit!since my college days they are running their business like a rock star.So many die-hard fans are there till now so they are open on all days even on Sundays and this time too when I visited my Amma’s place I had my samosa mix an awesome chaat item (samosa’s dunk in peas sauce with spicy tangy chutneys)sitting at my usual place where I would usually sit all these years!it was really an enjoyable evening sitting talking with my H!it was literally after many days of his hectic schedule that I had a chance to relax and chat with him.Some day I too will try this wonderful samosa mix for sure.whenever eating bhel puri I use to enjoy the crispy crunchy pieces that are mixed to this bhel puri chaat more than the crunchiness of onions.Those crunchy flat disks that are added to chaats can be easily prepared at home and sometime the proportion could be add half and half maida with wheat flour which tastes super good but habitually only maida is added but both way it tastes super good.You can add baking powder also but I have not added and adding ajwain gives a nice flavour to this papdi.Even ghee can be added instead of oil which will give nice flavour for sure.
how to make papdi for chaat (s)/papri recipe
INGREDIENTS:
All purpose flour/maida – 1 cup
Salt to taste
Oil – 4 tsp
Ajwain/omam – 13/4 tsp
Oil for frying
METHOD:
1.In a bowl add maida with salt,oil and ajwain form a dough by adding water.
2.For a stiff but soft dough and rest for 30 minutes.
3.Then knead again divide into 4 parts.
4.Roll it and cut with a round cutter.
5.Prick these circles with fork so that it does not puff up.
6.In-between heat kadai with oil.
7.when nicely hot add papdi to it bring the heat to medium and when nicely cooked and golden take out in a tissue.
8.Adjust the flame accordingly so that its cooked perfectly.
