If it is Andhra meals in hotels then in generality the expectation would be the paruppu podi the first served item!hot rice mixed with ghee then dry podi added to it gives a beatific aroma and I know most of us are badly addicted towards this garlic paruppu podi recipe. In most of the restaurants I see for afternoon meals its in their own routine to display cups of andhra paruppu podi,pickles and even andhra famous gongura chutney right on the table even before the guests arrive,its their customary practice!it’s a starter like item where the demand is so higher without which the whole andhra meals will not be complete.It may sound funny but I particularly want to have andhra meals for this podi and the gongura chutney they serve it gives a soulful satisfaction each time I have it.My son loves this homemade andhra paruppu podi so much that he often demands to have this podi added sadam with good amount of ghee as his school lunch.Always do add chillies according to your spice limit and even for garlic don’t add it too much that if you add more it will smell more garlicky.Sieving the podi is needed as we will have to get an even nice powder and adding dry coconut powder gives an added punch to this paruppu podi.

INGREDIENTS:
Roasted bengal gram dhal/pottukadali – 1 cup
Salt to taste
Redchillies – 12 no
Garlic cloves – 4-5
Desiccated coconut powder(dry) – 1 tbsp
Ghee – 1 tsp
METHOD:
1.In a kadai fry chillies in ghee then immediately add gram dhal and fry till every thing heats up nicely.
2.Switch off the stove add garlic cloves,salt,coconut powder and let it cool.
3.Grind the mixture nicely then take out and sieve it.
4.Add the coarse powder and again powder it then pass through sieve.
5.when all done store it in an airtight container.

Notes
We will get even fine powder when it is sieved otherwise the powder will remain coarse.
If you are not liking whole chillies add chillipowder instead it will also be good.
Add chillies according to your spice need.
If it is small clove then add 5 number if it is big then reduce accordingly.
