eggless simple cake/plain vanilla sponge cake(basic)Each variation’s of eggless cake have a different combination of ingredients and of-course comes out with different textures.Years before when I got my first oven I made a eggless cake with condensed milk and melted butter!!as I followed the instructions from the book and to my surprise I got a perfect vanilla eggless cake as expected!I was totally happy became more confident that I can bake.eggless simple cake/plain vanilla sponge cake(basic)From then I started having a special liking towards baking.The cake we make with eggs comes out soft because of eggs in it,but for eggless simple cake we have to struggle a bit with combinations of ingredients mmm!!yes!really is… I have tried and tested different variation’s of eggless simple cake from books,tv shows and even googled!!Every-person has their own method of making,me too have my own calculation’s…

eggless simple cake/plain vanilla sponge cake(basic)

 INGREDIENTS:

All purpose flour -70 grams
Icing sugar – 2 1/2 tbsp
Butter -60 gm
Condensed milk – 1/4 cup
Milk – 1/4 cup
Vanilla essence – 1/2 tsp
Baking soda – 1/2 tsp
Baking powder -1/2 tsp

METHOD:

PRE-HEAT THE OVEN FOR 10 MINUTES AT 180 DEGREES BEFORE HAND(Even the sides of the pan can be lined with butter paper to avoid burning).

FOR MY OVEN IT TOOK 20 MINUTES TO BAKE IN A 5″INCH DIAMETER PAN.

1.Keep all ingredients measured and ready.(butter should soft  but cool,it should not lose its shape)
2.Grease a 5″inch diameter tin with butter and dust with maida then cut butter paper and line it.
3.Pre-heat oven at 180 degree for 10 minutes.
4.First add butter,milk,milkmaid and sugar in same bowl and beat for five minutes.
5.Then add vanilla essence and again beat.
6.Don’t worry if it curdles.
7.In-between sift all-purpose flour,baking powder,baking soda together.
8.Add this sifted flour to the wet mix.
9.Don’t beat vigorously,mix gently at low-speed.
10.Beat only till combined and not to over do it.
11.Then drop it in the baking dish.
12.Tap the mixture to spread evenly.
13.Keep it in a pre-heated oven for minimum 20 minutes.(timing as per my oven)
13.Insert a skewer and when it comes clean cool the cake and make desired decoration or enjoy as it is.

Notes

The time settings are as per my oven nature and it depends from oven to oven.
The given measurements can be doubled as per your need.
When we use a thick pan it takes more time to cook from the inside,so can use a small pan so that it cooks quickly.
Make desired decoration or enjoy as it is.
Even the sides of the pan can be lined with butter paper to avoid burning.
